AlgaleX is exhibiting Umamo, a seaweed ingredient cultivated in Okinawa. The company presents it as a powdered marine ingredient with a strong, rich umami profile, positioned for food development at Hi Japan 2026.
The powder is intended for easy use by sprinkling, adding concentrated umami and DHA nutrition. AlgaleX says it is grown using previously discarded awamori sake lees, highlighting an upcycling approach to raw material use.
The exhibit is aimed at developers looking for plant-based umami, upcycled ingredients, and new seasoning materials, including applications in dashi powders and snacks.
