This salt is unique to pickle shops, because we pickle vegetables in salt, dry them, and grind them.
The vegetables used are nozawana, which is characteristic of Shinshu, Togakushi daikon, which is a traditional vegetable of Shinshu, and, although it is rare, this is a red pepper.
